1/4csemi-sweet chocolate chips(vegan if using dairy-free chips like Guittard or other)
Preheat oven to 350°F.
Peel bananas and add to medium-sized mixing bowl. Mash well with a fork.
Add oats and incorporate well. Mixture will appear very moist but be able to maintain a bit of shape.
Mix in chocolate chips.
With a spoon or scooper, drop onto cookie sheet. Cookie "doughs" should be about 3/4" x 3/4". Bake for 12 to 14 minutes (12 minutes if you prefer "gooey" cookies, 14 minutes if you prefer firmer cookies). Remove from cookie sheet and let them cool about 10 minutes before enjoying.
These cookies are best enjoyed the day they are made or the day after. Cookies may seem harder on the second day if they're baked too long, but will remain moist if they are a little "gooey" when removed from the oven.
