Pit each nectarine. (Instructions: 1. Slice each nectarine in half along the seam. 2. Twist firmly. 3. Remove the seed with a spoon.)
In a small bowl, mix together applesauce, cinnamon, vanilla, and chopped pecans.
Place nectarine halves, facing up, on a baking sheet. For easier clean up, lay foil on top of the baking sheet first.
Spoon applesauce mixture on top of each nectarine half, then spread around using the back of the spoon.
Place in oven and bake for 15 minutes. Allow to cool slightly before service.
For a decadent dessert, add 1 Tablespoon vanilla ice cream and an optional drizzle of aged balsamic and dried cranberries. May be made in advance and reheated in the microwave (~30 seconds for one nectarine half).
