Roasted Nectarines with Cinnamon and Pecan Glaze | Vegetarian, Vegan, No Sugar Added

  • 3 ripe nectarines
  • 6 Tbsp unsweetened applesauce
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • 2 Tbsp chopped pecans


  • Preheat oven to 375°F.
  • Pit each nectarine. (Instructions: 1. Slice each nectarine in half along the seam. 2. Twist firmly. 3. Remove the seed with a spoon.)
  • In a small bowl, mix together applesauce, cinnamon, vanilla, and chopped pecans.
  • Place nectarine halves, facing up, on a baking sheet. For easier clean up, lay foil on top of the baking sheet first.
  • Spoon applesauce mixture on top of each nectarine half, then spread around using the back of the spoon.
  • Place in oven and bake for 15 minutes. Allow to cool slightly before service.


For a decadent dessert, add 1 Tablespoon vanilla ice cream and an optional drizzle of aged balsamic and dried cranberries. May be made in advance and reheated in the microwave (~30 seconds for one nectarine half).
