Whole Wheat Chicken Quesadillas

  • 3 Tbsp avocado oil, divided (separate 1 Tbsp and 2 Tbsp)
  • 1 full chicken breast
  • 1/2 tsp taco seasoning (or similar -Trader Joe's Chile Lime seasoning works well)
  • 1 1/2 c shredded cheese (I like a Monterey Jack & cheddar blend or cheddar)
  • 6 whole wheat tortillas


  • Place chicken in a bowl with 1 Tbsp avocado oil. Season with taco seasoning or similar on both sides. Flip chicken to ensure both sides are lightly coated with oil and seasoning.
  • Grill chicken on indoor grill/panini press until internal temperature reaches 165°F, about 4 minutes. Remove from grill and cut into small pieces. See note #1.
  • With a tortilla laying flat, add cheese and chicken onto one half of the tortilla. Fold. With a pastry brush, brush avocado oil on each outer side of the quesadilla. Place back on indoor grill/panini press for ~2 minutes until cheese is melted. See notes #2 & 3.
  • Remove from grill. Enjoy!


Note #1: Chicken can also be cooked on the stovetop, about 5 minutes each side.
Note #2: Use tongs to pick up each quesadilla and place onto grill. This will allow you to brush both sides of the quesadilla with the other hand and make sure the quesadilla is folded as you shut the grill. It's easiest to remove the quesadilla with a spatula after it's finished cooking.
Note #3: You can also complete this step on the stovetop. If you want to decrease the amount of fat and calories, you can use a non-stick pan to eliminate needing to brush either side of the quesadilla with additional oil.
