A no-fail lean beef burrito recipe with lots of veggies that you can always fall back on! Ready in about 30 minutes!
Okay, let’s talk culture. I grew up in Texas which means that Tex-Mex is just a part of life, hah! I actually can’t remember the last time a week went by that I didn’t have some sort of Tex-Mex inspired dish: quesadillas, tacos, tostadas, guac, fiesta or 7-layer salad, you name it! A few months ago I added burritos to the menu. And to be honest – I’m not really sure if they’re burritos or enchiladas or enchilurritos?! Anyway, these lean beef burritos with enchilada sauce are where it’s at.

Alright so first thing’s first, what makes these beef burritos a nutritious choice?
How I Healthified these Beef Burritos
- I added veggies INTO the burritos to boost the nutritional value by increasing the fiber and vitamins and minerals. (And also I love doing this because let’s be real… sometimes veggies sitting on the side of your plate can seem daunting).
- I used a really lean beef (93% lean).
- They’re low in added salt but packed with flavor.
A Few Notes About Making These Lean Beef Burritos
They’re pretty no fail. Like really, it’s hard to botch these lean beef burritos. It’s forgiving.
Want to use ground bison or ground turkey instead? No problem. Want to use more or less veggies? Sure. (If you do use more, you might have extra filling at the end, but that’s ok! You can use it for a salad later).
Secondly, it makes a pretty big batch! You’ll definitely have leftovers if you’re just cooking for two.
Basically, I’m into them.
What to Serve with these Lean Beef Burritos
Definitely serve them with my super easy guacamole! You can also serve them over shredded lettuce or with a fun 7-layer salad.

- 1 tsp avocado oil
- 1 lb lean ground beef (I used 93% lean)
- 1/4 white onion, chopped
- 2 large mushrooms, diced
- 1/8 tsp salt
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 c beans (I use black or kidney)
- 2 Tbsp cilantro
- 1/4 c tomatoes, chopped
- 1/4 bell pepper, chopped
- 8 Tbsp enchilada sauce
- 1/2 c cheese
- 8 8" whole wheat tortillas
Ingredients

- Preheat oven to 250°F.
- Add 1 tsp avocado oil to a large pre-heated skillet (medium heat) on the stovetop. Spread oil around and add chopped onion. Cook until translucent (~5 minutes), tossing occasionally.
- Add beef, mushrooms, bell pepper, salt, chili powder and cumin to the skillet. Cook until beef is no longer pink and reaches an internal temperature of 160°F. Drain the fat.
- Add beans, cilantro and tomatoes to the skillet. Mix well. Remove from heat.
- Add beef mixture to tortillas and either roll up, or fold the ends and then roll up the tortillas and line along a cake pan so the tortilla "flaps" are face down (see note #1). Top with cheese and enchilada sauce. Bake at 250°F for 10 minutes until cheese is melted.
- Remove from oven and serve.
Note #1: Rolling the tortillas at room temperature may cause them to break. You can heat the tortillas ahead of stuffing so they are warm and don't break. Either place them in the toaster oven for ~2 minutes, heat on a skillet, or wrap a stack of tortillas in foil and place in the oven while it's preheating.

These look so yummy, and easy too~love! I’m a Cali girl, so I grew up with California Mex food, but I also went to college in Texas, and lived there when my kids were little. My favorite TexMex dish to order in college was a chimichanga~we never had those in California, and boy were they delicious!
