Ingredients
Instructions
  1. Preheat skillet to medium heat. Add oil.
  2. Add onion. Sauté about 5 minutes until translucent and softened.
  3. Add meat and brown (~7 minutes).
  4. When meat is mostly cooked through (it’s okay if there’s still a little pink), add canned tomatoes, mushrooms and taco seasoning. Simmer ~3-5 minutes until meat is cooked all the way through reaching an internal temperature of 165°F and no longer pink.
  5. Scoop meat mixture with a slotted spoon into crunchy corn taco shells.
  6. Top with shredded lettuce, cheese and whatever else your heart desires!
