Try this 30-minute dinner with mouthwatering Rub with Love, baked-then-broiled salmon gyros recipe with cucumber, tomato and tzatziki sauce.
I’ve been holding out on a favorite recipe for a very long time: deliciously satisfying salmon gyros on whole wheat pita with tzatziki sauce. But, the good news on the hold-out, is I have a new favorite way to prepare salmon I’ve been using in it.

Rub with Love Salmon Gyros
This meal comes together in about a half hour and it’s a crowd-pleaser. You’ll start by prepping your salmon with olive oil and a generous amount of Rub with Love seasoning. While your salmon is baking, chop up cucumbers, tomatoes and make the tzatziki sauce. You’ll finish off your salmon with a 3-4 minute broil. Just before serving, warm up your pita (I use the toaster oven), then serve! (Note: I actually use Stonefire whole wheat naan almost every time instead of pita; Central Market makes great whole wheat pita in house as well).
Rub with Love Salmon
I stumbled across Rub with Love Salmon seasoning at Central Market last year (also available on Amazon here), and it is hands-down the best salmon seasoning I’ve ever tried. I used to only bake it, but one day my toddler turned the oven on broil when I wasn’t looking. I was mad my salmon was “ruined!” Turns out, it was the best salmon I’d had!

From there I tweaked my timing and found that, if using about a pound of salmon, baking first at 400° for 16 minutes (18 minutes if a thicker or bigger piece), then broiling for 3-4 minutes gave a perfectly sweet salmon.

Nutritionally, aside from being a fantastic source of protein, salmon is a great source of omega-3 fatty acids, boasting ~1.5 g omega-3 fatty acids (DHA + EPA) per 3-oz serving (1). For reference, Adequate Intakes are 1.1 g/d for women and 1.6 g/d for men (1.4 g and 1.3 g, respectively, for pregnancy and lactation) (1). Don’t toss the grey, meaty part of your salmon! It contains about 1/3 of the omega-3s. And DYK the omega-3s found in salmon originate from the microalgea consumed by fish, not the fish itself? Now you do (2).
Easy Tzatziki Sauce with Greek Yogurt
While the salmon is baking, get started on your tzatziki sauce. This is a super simple tzatziki sauce with Greek yogurt, fresh or dried dill, shredded cucumber (save the rest of your cucumber! You’ll need it for a chopped cucumber and tomato mix), lemon juice and salt.
How Salmon Gyros Fit Plan Your Plate
If you’re familiar with my Plan Your Plate guide, you know my formula for balanced meals are: a great source of protein (aim for at least 15-25 g protein per meal), a high fiber starch or grain, a non-starchy vegetable, fruit (or double up on veggies) and a fat!
- Protein: Salmon (~7 g/oz or 21 g of protein per 3 oz serving), Greek yogurt
- Starch or grain: Whole grain pita or naan (3 g of fiber per 1/3 of a naan if using Stonefire whole grain naan)
- Non-starchy veg: Cucumbers, tomato – could also serve with a side salad!
- Fat: Some in salmon, some in Greek yogurt if using a 2% fat Greek yogurt

What to Serve with these Easy Salmon Gyros
These salmon gyros fit the bill for a balanced meal themselves, but I always like to serve a fruit option at meals, and a nice salad would pair well with these gyros especially if hosting!

Equipment

Ingredients
Rub with Love Salmon
- 1 lb salmon
- 1 Tbsp olive oil
- 3 Tbsp Rub with Love seasoning
Easy Tzatziki Sauce
- 1 c 2% Greek yogurt
- 1 tsp dried dill (can sub for fresh dill)
- 1/2 lemon, juiced (juice of 1/2 lemon)
- 1/4 cucumber, shredded (save the rest!)
- salt (to taste)
Salmon Gyros (+ Rub with Love Salmon, + Tzatziki Sauce)
- 1/2 cucumber, chopped (can use seedless)
- 12 cherry-sized tomatoes, chopped
- 4 whole grain pita breads (or whole grain naan breads)
Instructions
Rub with Love Salmon
- Preheat oven to 400°F.
- Prepare salmon by placing on a baking sheet (can line with foil for easy clean-up). Top with olive oil and spread all along the top of the filet with a pastry brush or back of a spoon. (Note: You can leave the skin on while it bakes! It peels away very easily after baking when you dish it up using a spatula.)
- Add Rub with Love seasoning. Rub in with fingers all the way to edges of the salmon filet.
- Set timer to bake for 16-18 minutes at 400°F. (Note: thinner, smaller filets will be ~16 minutes, thicker filets or filets slightly larger than 1 lb will be ~18 minutes). While salmon is baking, prepare tzatziki sauce and chopped veggies.
- After salmon has baked for 16-18 minutes, change oven setting to BROIL for 3-4 minutes. Internal temperature should reach 145°F.
Easy Tzatziki Sauce
- Rinse cucumber and lemon.
- Add Greek yogurt to a bowl. Use a zester or shredder to shred 1/4 of the cucumber into the Greek yogurt. Add juice of 1/2 a lime and dill. Add salt to taste. Stir well before serving.
Salmon Gyro Assembly
- Chop cherry-sized tomatoes and cucumbers. Combine in a bowl and stir.
- Once salmon and tzatziki sauce are ready to serve, warm pita in the oven, toaster oven (~2 minutes and 20 seconds) or on a frying pan.
- Assemble gyros. Place salmon, tzatziki sauce and chopped vegetables on top of pita. Fold and eat!
