I’m loving this beautiful spring weather! Saturday afternoon we celebrated Baby T’s first birthday and it was a gorgeous 85 degree, Texas day! With St. Patrick’s day rolling around I’ve got green on my mind. Look, and I don’t want to get pinched but I would prefer to focus on foods that are naturally green without food dye! From a healthier Shamrock Shake, to pancakes, muffins, salads, pastas and even meatballs, there’s something for everyone (and lots of plant-based options!).

Green Smoothie Pancakes (Vegetarian) by Lean Green Bean. What I loooove about this recipe is you can make it ahead of time! If you’re anything like me, weekday mornings are usually not the day for pancakes. Busy mama? Yes please! These pancakes use spinach as the green base.

Healthy Shamrock Shake (Vegan, Gluten-Free) by Emily Kyle Nutrition. DYK a large Mickey D’s Shamrock Shake will set ya back over 800 calories, with 29 tsp of sugar and contains over 50 ingredients?! I’d opt for this one instead!

Green Oatmeal Chocolate Chip Muffins (Vegetarian) by Milk & Honey Nutrition. BRB I think I need to “recipe test” these a week early if ya know what I mean! Notably, she highly recommends using a silicone pan or silicone pan liners only (like these) when baking muffins using oats; otherwise it’s likely they will stick to your muffin tin or liner.

Whole Wheat Quiche Florentine (Vegetarian) by me! Swiss cheese, nutmeg and spinach make a delicious debut in this quiche! This one works great for leftovers or served later. If you’re tight on time you can make it the night before to serve at breakfast. Or eat at dinner. I won’t tell.

Tropical Turmeric Green Smoothie (Vegetarian) by Edwina Clark, RDN. You had me at pineapple. Or maybe it was yogurt. Or was it the spinach? I don’t know, just g i m m e plz & thnx.

Light and Fluffy Matcha Lemon Muffins (Vegetarian) by Beautiful Eats & Things. Look at that glaze!

Edamame Hummus with Sumac-Grilled Pineapple (Vegan, Gluten-Free) by Dishing Out Health. Whip up this beautiful, green edamame hummus to serve with a crudité board or yummy pita!

Fig & Feta Salad with Roasted Chickpeas and Walnuts (Vegetarian) by Back to the Book Nutrition. I don’t think a better combo exists than fig and feta. End of story.

Vegan Green Goddess Avocado Dip (Vegan) by Fork in the Road. This recipe swaps mayo for avocado for a creamy spread perfect for any sandwich or veggie tray!

Roasted Zucchini Sauce (Vegan, Gluten-Free) by Meme Inge, RDN. No lie, you actually need this zucchini sauce in your life. It’s the perfect topping for pasta, eggs, a grilled sandwich – you get the idea. Think roasted zucchinis… plus sunflower seeds, lemon juice, garlic and all things delicious.

Avocado Kale Salad (Vegan, Gluten-Free) by Jenna Braddock, RDN. I’m the biggest fan of dressing that uses a balsamic reduction or aged balsamic. If you aren’t sure about your relationship with kale, try this salad. Consider it your first date!

Thai Green Curry with Vegetables (Vegan) by Tara Rochford Nutrition. How beautiful does this look?! It’s got me craving all of Thailand now! My husband and I went in 2017 and ate the most delicious curries!

One Dish Spinach Casserole (Vegetarian, Gluten-Free) by Alyssa Ashmore, MS, RDN, CSSD, LD. I am looooving on this recipe! I’m a super sucker for one-dish anything PLUS Alyssa shares my same affinity for leftovers.

Spanakopita Chicken Meatballs + Spinach-Dill Pesto by The Gourmet RD. You guys, she’s a chef. And a dietitian. I would listen to what she has to say. I mean I’ve never had green meatballs before and wouldn’t trust myself to try to pronounce “spanakopita” but here I am running to get these ingredients.
