I’m new to the Instant Pot train (affiliate), but mom life has me needing to get dinner on the table fast. I have an adorable, tiny dictator that hops in the bath by 5:40 and has the patience of a puppy. To get inspired with my new kitchen appliance, I rounded up some of my dietitian gal pals’ favorite, healthy Instant Pot recipes!

Here I have a mix of (mostly) entrees from chicken and beef to completely plant-based. I’ll break each of these down by category so it’s easy to navigate!
Healthy Chicken & Beef Instant Pot Recipes

Instant Pot Chicken and Yellow Rice (Gluten-Free) by Love and Zest. A whole meal in one pot! This recipe uses frozen peas and corn (which is great because they’re easy to keep on hand!) and she has a handy video to go along with it if you’re new to the Instant Pot!
Instant Pot Korean Beef Tacos by Mom’s Kitchen Handbook. Low in sugar but big on flavor, you won’t want to miss these tacos next Tuesday!

Instant Pot Chicken Teriyaki (Gluten-Free) by Chelsea’s Choices. Whip this up in 15 minutes and serve it with brown rice and steamed broccoli for a quick, balanced meal! Chelsea shares a recipe for lightened up (lower sodium!) homemade teriyaki sauce but you could also use a store-bought if you’re tight on time!
Instant Pot Chicken in Salsa Verde (Gluten-Free) by Mom’s Kitchen Handbook. What I love about this recipe is you make your own salsa! But – easily enough – it’s just made in the Instant Pot with the chicken.

Instant Pot Guinness Beef Stew by Kara Lydon, the Foodie Dietitian. Two words: FLA-VOR. Okay fine, it’s a hyphenated one word but it deserves it!
