If you’ve been following me for a while, you know I’m a new mom! In fact, our little girl is a MONTH old this week! That means… my life is currently running on mom buns, zero sleep and the easiest recipes I can whip together. Behold, I give you whole wheat chicken quesadillas!
Whole Wheat Chicken Quesadillas
Being from Texas, I’m a huge fan of all things Mexican food. Okay, okay… Tex-Mex. Anyway, burritos, fiesta salads, tacos (try these healthy bison tacos!) – they’re all up my alley! I had the idea a few weeks ago to throw together chicken quesadillas and this is what I came up with!
Why Whole Wheat Chicken Quesadillas are a Good Option
These whole wheat chicken quesadillas offer fiber (from the whole wheat tortilla), protein and are lower in sodium than what you might find dining out. Besides being super tasty, they are super quick to make! They are great for a weeknight meal!
What to Serve Whole Wheat Chicken Quesadillas With
I always like to make sure every dinner meal has:
- Protein
- A starch or whole grain
- A non-starchy veggie (that’s pretty much any vegetable other than potatoes, corn, beans and winter squash)
- And fruit!
Serve these whole wheat chicken quesadillas with a side salad or sautéed veggies and fruit for dessert and you are good to go!

You can make my super simple guacamole or I’ve also tried these with “cowboy caviar” (I used this recipe) on top!

Whole Wheat Chicken Quesadillas
Ingredients
- 3 Tbsp avocado oil, divided (separate 1 Tbsp and 2 Tbsp)
- 1 full chicken breast
- 1/2 tsp taco seasoning (or similar -Trader Joe's Chile Lime seasoning works well)
- 1 1/2 c shredded cheese (I like a Monterey Jack & cheddar blend or cheddar)
- 6 whole wheat tortillas
Instructions
- Place chicken in a bowl with 1 Tbsp avocado oil. Season with taco seasoning or similar on both sides. Flip chicken to ensure both sides are lightly coated with oil and seasoning.
- Grill chicken on indoor grill/panini press until internal temperature reaches 165°F, about 4 minutes. Remove from grill and cut into small pieces. See note #1.
- With a tortilla laying flat, add cheese and chicken onto one half of the tortilla. Fold. With a pastry brush, brush avocado oil on each outer side of the quesadilla. Place back on indoor grill/panini press for ~2 minutes until cheese is melted. See notes #2 & 3.
- Remove from grill. Enjoy!
