Nectarines are a love affair of mine. I love stone fruit season and I can’t seem to get enough of them in the summer months! I whipped together these roasted nectarines with cinnamon and pecan glaze without any added sugar, and they make the perfect snack, fruit serving for a meal, or even dessert!

Roasting always enhances the sweet flavor of produce, whether its a fruit or a vegetable (think of roasted sweet potatoes!). Roasted nectarines have the aroma and flavor of a warm, stone-fruit pie. This recipe is super easy to pull together, but it looks very elegant when plated! You can dupe all your friends into thinking you are a gourmet chef; I won’t tell! ☺️

I totally admit I googled this the first time I did it. In simple steps, here’s how to remove the pit from a ripe nectarine:
- Cut the nectarine in half along the “seam.”
- Using some force, grab each half of the nectarine and twist. You might feel like you’re definitely going to squash the nectarine, you won’t.
- Gently cut around the pit using a spoon. It will have been stuck to one side of the nectarine.
I made this super simple video while I was preparing these nectarines on removing the pit if you need a visual reference.
How to Serve This Dish
These roasted nectarines are fantastic straight from the oven (after a little cooling, of course) with nothing else added but there is a world of possibilities! At breakfast, you could slice these up and add them to your oatmeal. At lunch you could use it as your fruit serving. For dinner, you could slice and serve it on top of a salad. Or, of course you can serve it for dessert! If you want to get really fancy with dessert, top it off with just 1 tablespoon of vanilla ice cream, a drizzle of aged balsamic and a few dried cranberries. It is the epitome of perfection!

Roasted Nectarines with Cinnamon and Pecan Glaze | Vegetarian, Vegan, No Sugar Added
Ingredients
- 3 ripe nectarines
- 6 Tbsp unsweetened applesauce
- 1/2 tsp cinnamon
- 1/4 tsp vanilla
- 2 Tbsp chopped pecans
Instructions
- Preheat oven to 375°F.
- Pit each nectarine. (Instructions: 1. Slice each nectarine in half along the seam. 2. Twist firmly. 3. Remove the seed with a spoon.)
- In a small bowl, mix together applesauce, cinnamon, vanilla, and chopped pecans.
- Place nectarine halves, facing up, on a baking sheet. For easier clean up, lay foil on top of the baking sheet first.
- Spoon applesauce mixture on top of each nectarine half, then spread around using the back of the spoon.
- Place in oven and bake for 15 minutes. Allow to cool slightly before service.

We last minute had dinner guests and I didn’t want to serve boring ice cream for dessert nor did I have 45-60 mins to make brownies, cookies, or some other baked good.
